Tomato, Cucumber and Red Onion Salad



This is the perfect summer salad!  It's simple, fresh, and delicious.  The recipe below makes 4 large servings, each with a Points+ Value of 2.


Ingredients
2 cucumbers, peeled and thinly sliced
3 tomatoes, cut in half and thinly sliced
1/4 of a red onion, thinly sliced
1/8 cup olive oil
Red wine vinegar, start with 2 splashes
Salt
Pepper


Instructions
Mix all ingredients together.  Add salt, pepper and vinegar to taste.  That's it!


I like to let this sit in the refrigerator so that everything blends together.  The juice that is left at the bottom of the bowl is the best part!  Use some fresh, crusty bread to sop it all up!
